New crop: Hemp!
Hemp is a ridiculously versatile crop that is both fast growing and edible in a pinch. Thematically it would fit perfectly into the game, as hemp nowadays is considered a crop that's actually helpful to the environment.
Beavers already have plenty of food crops, so hemp could stand out by being a crop that's grown solely for its potential as a building material. Think about it! Ropes, canvases, clothing, etc. Hemp could be planted and harvested like any crop, then processed into thread or cloth, ideally with a new manufacturing building which uses looms.

Beaver BaristaI like this idea a lot. Hemp feeds the loom. Loom can be set to making rope or cloth. Rope can be used to make transport pullies for faster supply movement at elevation changes. Cloth and treated planks could be used to make ferries that act as alternative to pathway in water.

Beaver BaristaOr your hemp could be an alternative raw material for the paper mill which would be cool too. Makes less paper than wood but faster turnaround.
